Overview
A bar is a timed environment. Competence here is not knowledge recalled — it is the right action, in order, under load, in front of a guest. This programme is built backwards from a real service window and assessed inside one.
Learners carry product literacy, drink production to specification, full table and floor service, and the commercial control that separates a bartender from a future supervisor. Practical competence is observed on shift at an approved host venue by a qualified occupational assessor.

Venue roles, responsible service of alcohol, grooming, conduct and shift handover.
Contamination control, temperature discipline, ice and glass handling, cleaning schedules.
Styles, regions, production and the tasting vocabulary guests expect from you.
Classic specifications, build methods, batching, garnish work and consistency under speed.
Sequence of service, order taking, bottle presentation, tray work and room timing.
Pour cost, variance, stocktake, wastage, POS accuracy and cash handling.
Complaint recovery, refusal of service, escalation and composure under load.
How you are assessed
Practical competence is assessed in person by a qualified assessor against written criteria. No practical competence is assessed online.

Beverage, hygiene and control theory, invigilated
Entry requirements
- 17 years or older at the start of the programme
- Senior Four (UCE) or equivalent — or recognition of prior learning for experienced workers
- Working English sufficient for guest service
- Health and hygiene clearance for food handling
- Availability for in-person practical blocks at a host venue
Certification
Learners receive the ASIEA award and the evidence behind it. External certification is being sought: the units, notional hours and assessment on this page are written so a certification body can map them to its own qualifications.
