Overview
A production kitchen is judged on repeatability — the same dish, to the same standard, at the same speed, on the four-hundredth cover as on the first. This programme trains and assesses that consistency on a live section.
Learners work through the core cookery methods, hold a section through service, and carry the hygiene and costing discipline a head chef will not compromise on. Practical assessment happens in an approved host kitchen during real service.
What you study
7 units · 480 notional hours. Hours shown are the notional allocation used for planning and progression.
Brigade structure, mise en place discipline, communication and handover.
Hazard analysis, critical control points, temperature logs and allergen management.
Cuts, butchery basics, fish preparation, vegetable work and yield control.
Boiling, braising, roasting, frying, grilling and sauce work to a written standard.
East African dishes alongside the international menu items used in hotel kitchens.
Holding a section through service, plating standards and ticket sequencing.
Recipe costing, portion discipline, stock rotation and waste reduction.
How you are assessed
Practical competence is assessed in person by a qualified assessor against written criteria. No practical competence is assessed online.

Set dishes produced to specification under timed conditions
Completed HACCP records and temperature logs from placement
Recorded questioning on method, safety and costing
Entry requirements
- 17 years or older at the start of the programme
- Senior Four (UCE) or equivalent — or recognition of prior learning for kitchen workers
- Working English sufficient for kitchen communication and written records
- Health and hygiene clearance for food handling
- Availability for in-person service blocks at a host kitchen
Certification
Learners receive the ASIEA award and the evidence behind it. External certification is being sought: the units, notional hours and assessment on this page are written so a certification body can map them to its own qualifications.
